Easy BBQ desserty’s, appetizery’s all things ending in Y ideas

UPDATED: May 28 2010

{{As we gear up for another Marvelous Memorial Day Weekend, I thought I would re-share ….. Enjoy your weekend of Rest, Yummy Food, Great Friends & Family… and of course Memorial Day Margaritas! :) }}

Summer is in full swing, ok well maybe not in full swing– but its getting there, and BBQ’s are filling up calendars all over.

I love BBQ’s, I love the easiness of them, the socializing, the kids playing, sipping on some ice cold drinks to drown out the kids fighting relax. I love everything about them- well except one thing… the question always lingering over head of “What Can I Bring?”… its nice when the hostess has some suggestion, but sometimes its just “O, you can bring an appetizery type thing ” or ” how ab some “desserty something?” “….. in my experience anytime someone adds a Y to the end of a food item— it means, “I have no freakin clue… GOOD LUCK!” … and if you are like me, decision making doesn’t come easy…. you know that and you lack that signature item- so many moms have.

So I have decided to help us all out and along with my Twitter friends compiled a list of EASY (cause that is the keyword right?) recipies for all those Y BBQ moments; feel free to put them on rotation, …. signature dishes are over rated and so yesterday… after all , you may BE a mom but you aren’t YOUR mom.

Plus less time stressing, and googling makes for more time drinking & tanning bonding with family & friends.. so print out this list or bookmark the page (OR EH-HEM … SUBSCRIBE to the site)… and thank me and my tweets later ;)

AppetizerY Types:

@complicatedmama usually resorts to these:

Easy- Peasy- Buffalo Chicken Dip

Ingredients

  • Chicken (I use those small rotisserie chickens you find in the grocery store, but you can grill your own or used canned)
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup Ranch dressing
  • 3/4 cup Frank’s Red Hot Sauce
  • 1 1/2 cups shredded Cheddar cheese

Directions:

Heat hot sauce in a skillet over medium heat, Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Shred Chicken and add to heated mixture. Mix in half of the shredded cheese. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks or crackers.

-Artichoke dip . (click for linked recipe)

it can be made into spinach artichoke dip, but I adding spinach is too complicated for this mama. lol

-Oriental Coleslaw. (click for linked recipe)

(also recommended by @jennfowler … so this one is def. frugal friendly too!)

SO SO Yummy. Key here is to make sure you add the ramen noodles RIGHT before it is served so its nice and crunchy!

-Mexican Layer dip.

I think everyone knows someone who makes this or a version of this dip,its a BBQ staple with our group– seriously, right up there with YAGO & hotdogs. My sister can eat it up with a spoon- and has… literally.

Layer 1- 1 stick of cream cheese spread out in casserole dish

Layer 2- Hormel Chili No beans

Layer 3- 1pkg of shreeded cheddar cheese

Bake at 350 for 20 minutes. Mix it up and serve with chips.

1 Cup Fiber One Cereal (corn flakes work for this too though)

    My favorite summer crowd pleaser is Fruit Pizza. Take a roll of sugar cookie dough & spread out like a pizza crust. Bake. Spread a can of cream cheese frosting over it like the sauce then garnish with fresh fruits. A 4th of July fav is to make it in the shape of a flag and decorate it that way with blueberries, raspberries & strawberries. Yummy!
