Ain’t Martha’s Baked Ravioli Parmigiana

It is not a secret- I do not love to cook.

Once in a while after watching the Food Network I’ll be inspired to morph into Giada, but typically? I’m more of a 30 min or less kind of chef… though I love to make it look like it took way longer.

Case in point? This past Monday James and I had a date night in the city to see Carrie Underwood on Live On Letterman. Monday is always my craziest day filled with extra curricular activities and catching up on weekend emails and this one was no different.

I looked at the clock at 2:30pm and found I was still not showered … the sitter was coming at 4pm and {ring ring ring} No. No, there was not soccer after school today. (Yes, sorry ladies- Mother of the year has been taken by yours truly)

Dinner was the last thing on my mind, though at 3:30 it had to be dealt with.

Luckily, we always have pasta and jarred sauce on hand in our house… yes, I am married to an italian and I have jarred sauce in our pantry. Hey! desperate times call for desperate measure and just stay with me- I disguise it well. Promise.

Here is how in 30-ish minutes I prepared my household famous–

Fake and Bake Ravioli Parmigiana

Ingredients

  • (2) packages of frozen ravioli
  • (1) jar of marinara sauce
  • 1 table spoon of cream cheese
  • red pepper
  • breadcrumbs
  • pam
  • shredded mozzarella
  • parmigiana cheese
  • egg or egg substitute

Directions

  • Defrost ravioli
  • Dip raviolis in egg, cover with breadcrumbs and spray with pam spray
  • Lay all raviolis on baking sheet and bake for 20 minutes on 350
  • In a bowl heat sauce with 1 table spoon of cream cheese and a pinch of red pepper, mix well.
  • Remove baked raviolis and layer in casserole dish-
    • ravioli, light layer of sauce, parmigiana cheese, shredded mozzarella (repeat)

Bake uncovered in the oven on 420 degrees for 10-15 min. Bake until golden.
