As a “Pre-Easter Present”, Mr. Complicated bought me the new “Hungry Girl 1-2-3” Book.
For those of you unfamiliar with Hungry Girl, she shares/publishes super ridiculously easy- figure friendly- recipes for reinventing some of our favorite foods! (ie: Taco Bell’s Nacho’s Supreme) If you are like me and love Weight Watchers- you will also be happy to know that all of her recipes have a point value on her site and are also easy to calculate from her book.
This week I planned all of my meals for the week from her book– and every meal is 5pts and under!
This morning’s breakfast I actually picked out for my son because he loves reading Dr. Suess at night lately-
Green Eggs and Ham
A basic scrambled egg with green food coloring with deli ham on an English muffin.
The results were so cute I had to share:
I text the above picture to Mr. Complicated to which he responded:
“But would he eat them in a box or would he eat them with a fox?”
…. and between bites , still chewing… The Boy mumbled out “YUP!”
Yes, He likes them Sam I am, The Complicated Boy likes Green Eggs and Ham!
Disclosure: I have NO ties with Hungry Girl I just really love her stuff, wanted to share and thought The Green Eggs and Ham recipe was a great idea for kids!-though I would not pass up the opportunity to work with her- so Lisa- if you are reading this and thinking wow!I need to work with a Complicated Mama as sassy and classy as this chick–… call me! :)
