When it comes to cooking, my style is … psuedo– which basically means, I enjoy making my meals look like I spent all day slaving over a hot stove, when in reality I threw it all together 30 minutes before my husband walked through the door.
Come to think of it, that is my cleaning style too…. hm.
I digress.
If you are like me and “short-cut-cooking” is your middle name, I have a recipe to share with you today that is going to make your family fall at your feet … or at the very least request seconds.
My family has named this one of my “best meals ever” – and believe me, my son is the ultimate critic.
Ingredients
- 1 lb. thin veal slices (my store carries scaloppini packages)
- 2 tbsp. extra virgin olive oil
- 4 table spoons of butter
- Flour
- 1/2 cup of lemon juice
- 2 tablespoons of capers
- Salt and pepper
Instructions
- Over medium heat, cook oil and 2 tablespoons butter
- Coat veal in flour
- Cook veal 1 minute on each side (lightly brown)
- Transfer to covered container add salt and pepper to taste
- Over a low flame, and add lemon juice, butter and capers to the remaining cooking sauce & scraps
- Pour sauce over veal – Viola!
