Holidays are O-V-E-R. {{HOLLA!}}
It has been a really great Christmas break this year- one that definitely left me exhausted, but also one that I was sad to see end. When we weren’t visiting with family and friends, putting together new toys, purging old ones and trying to dig our way out of cardboard boxes and gift bags, we enjoyed lounging, homemade pancakes and James and I got into a nice little routine of watching marathons of Homeland every night after the kids went to bed. It was nice.
So with one half of the household going back to school/work today, I made a special dessert (or “night snack” as my kids call it).
If your house, like mine, has tons of left over candy canes, this one is PERFECT- especially because it won’t sabotage anyone’s New Years diet… AND? It’s NO-BAKE! Does it get sweeter than that???
Ingredients
- 1 pie ready-made chocolate pie shell
- 1 small box Free Fat Vanilla Instant pudding mix
- 1/2 cup fat-free sweetened condensed milk
- 1/4 cup skim milk
- 3 cups fat free whipped topping (like Cool Whip)
- 1/4 cups mini semi-sweet chocolate chips
- Toppings:
- 2 crushed candy canes
- Fat-free Reddi-whip
Instructions
- Combine condensed milk, skim milk, and pudding mix in a large bowl
- Gently combine whip topping by folding it into mixture
- Stir in chocolate chips and 3/4 of crushed candy canes
- Pour Mixture into ready made pie crust
- Chill in refrigerate for 2 hours
- When ready to serve top with Fat Free Reddi-whip and sprinkle remaining crushed candy cane.
- *You can also make pie filling and freeze it for when you need a quick-no bake, no-mess dessert to bring to someone's house. Just thaw filling, fill pie crust and be sure not to add toppings until ready to serve!
