Bananas are the best fruit on the planet, am I right? I would be slightly suspicious of anyone who dared to say they didn’t like them.
In our house we go through them like crazy. We eat them for breakfast with peanut butter, in smoothies, by themselves as an on-the-go snack. But of all banana goodness in this world, there is little that compares to a banana bread.
I mean, dessert, after-school snack, with coffee… there is just no wrong way or time of day to eat it.
Well, today we’re sharing a crazy-good, crazy-easy banana bread recipe to share, that you can whip up in just 30 minutes.
What I love most about this recipe (besides the obvious quick-cook time, because that is always a must in my kitchen) is the addition of the brown sugar- cream cheese frosting and vanilla greek yogurt. Not exactly, diet-friendly but totally worth the occasional indulgence.

Ingredients
- Banana Bread
- 1 stick unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 non-fat vanilla Greek yogurt
- 1 tsp vanilla
- 2 eggs
- 4 ripe bananas, mashed
- 2 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup chopped walnuts
- Frosting
- 1/2 cup brown sugar
- 1/4 cup (4 Tbsp) unsalted butter
- 1/2 stick of cream cheese (4oz)
- 2 tablespoons of milk
- 1 tsp vanilla
- 1 cup of confectioner's sugar
Instructions
- Easy Banana Bread
- Preheat oven to 350 degrees
- Grease an 8-inch baking pan
- In a large bowl or mixer, whisk together butter and sugar.
- Add yogurt, egg and vanilla and mix until well blended.
- Add mashed banana and mix.
- Add dry ingredients and mix to incorporate.
- Pour batter into baking dish and spread with a spatula to smooth.
- Bake for 25 minutes
- Cool completely before frosting.
- Frosting
- Combine brown sugar, butter and milk in a sauce pan
- On medium heat, stir and boil
- When mixture comes to a boil stir in vanilla extract and powdered sugar
- Pour frosting over bars
- Sprinkle chopped walnuts over the top.
- Chill, cut into bars and serve
